HEALTHY SNACK RECIPES

Orange Julia

2 cups milk
1 can (6 ounces) unsweetened orange juice concentrate
1 teaspoon vanilla
10 ice cubes

Place all ingredients into a blender container and mix.  Makes 8 to 10 small servings.
 
 

Crunchy Peanut Butter Balls

1/2 cup raisins                               1/4 cup powdered milk
1/4 cup unsweetened apple juice     1 teaspoon vanilla
      concentrate                             1 teaspoon cinnamon
1/4 cup peanut butter                     1 cup nut-like cereal

Heat raisins and apple juice in a saucepan.  Boil about 3 minutes.  Pour raisins and juice into a blender and puree.  Mix raisin puree and remaining ingredients in a bowl.  Add a few drops of water, if necessary.  Shape the mixture into small balls.  Eat as is or refrigerate overnight.  Makes about 30 small balls.
 
 
 

Yogurt Popsicles

1 cup plain yogurt
1 banana, sliced
1 teaspoon vanilla
1 cup unsweetened fruit juice or fruit chunks

Blend all ingredients together in a blender and pour into small paper cups.  Freeze. Place a plastic spoon
or a Popsicle stick in each cup when yogurt mixture is half frozen.  To serve, turn cups upside down and run hot water over them until the Popsicles slip out.  Makes 4 to 5 small Popsicles.  Popsicles made with orange juice or peach chunks are favorites.
 
 
 

Quick Energy Pick-Ups

1 cup confectioners'  sugar
1 cup crunchy peanut butter
1 cup semisweet chocolate chips
1/2 cup instant nonfat dry milk
3 Tablespoons cold water
2/3 cup flaked coconut

Combine confectioners' sugar, peanut butter, chocolate chips, milk powder and water in a bowl; mix well.
Shape into balls.  Coat with coconut.  Place on a cookie sheet.  Chill for 20 minutes or until firm.  May substitute 1/2 cup graham cracker crumbs for flaked coconut.
